The British Society of Flavourists is hosting a lecture that will examine recent studies on the relationships between our senses and nutritional needs and question how they have been shaped by evolution to help us to select foods which provide us with an optimum diet. The lecture will speculate on what role flavor chemistry plays in food selection by focusing on both olfactory and gustatory cues that suggest that human nutritional intelligence is hard-wired to chase flavor.
